This special spring must is a very rare olive oil produced only occasionally when the harvesting of olives from the higher groves is delayed to April, May. In the late spring the Taggiasca olives are particularly ripe, allowing the production of an extra virgin olive oil with a pale gold colour, sweet taste and a very elegant nose.
