The balsamic vinegar of Modena is obtained by a slow fermentation of cooked must made with grapes from Emilia Romagna. The must is then skilfully mixed with percentages of strong wine vinegar. It is naturally aged and rened in little casks of various kinds of wood such as oak, chestnut and mulberry, following the traditional production methods. It is perfect with varied dishes, from appetizers to desserts.
