The Palamita fillet from Colimena are crafted in the beautiful region of Puglia. This Colimena Palamita, caught in the Mediterranean Sea, isn’t steamed as is more common today. Instead, it’s gently cooked in water with herbs, white vinegar, and lemon using a traditional method that keeps the fish tender, juicy, and full of flavour. Once sliced, the fillets are carefully packed into glass jars with olive oil by hand, so you can enjoy the quality and care that’s put into every step.
