In this pasta instead, wheat germ is added back to the flour using special techniques and immediately processed when still fresh. When the pasta is cooking, it exudes a pleasant fresh smell of wheat and the boiling water takes a light green shade, due to the presence of fresh wheat germ. This beautiful pasta is dried slowly at a cool temperature never exceeding 40°C and it is excellent even with just a dab of good olive oil.
